Chili Cookoff Today

Awaiting results of the chili cookoff at work today. Not optimistic that mine will win or place – there are 19 contestants. Most are spicier than mine and two are more exotic. Still, I’m proud that I came up with a recipe, put it together, and came up with something not only edible, but decently tasty. While I have a talent for combining basic ingredients, I’m not so great at seasonings. Therefore, this mild success was for me a major coup.

Sunshine Chili

1 lb 95% lean ground beef
about 1/5 of a small summer sausage
1 yellow bell pepper
1 orange bell pepper
5 small orange tomatoes
1 8 oz. can crushed pineapple
1 small jar of pineapple salsa
1 can pinto beans
1 can kidney beans
1 small can diced green chiles
1 Tbsp cumin
1 Tbsp chili powder
1 tsp cinnamon
1/2 tsp crushed red pepper

Chop up the bell peppers and tomatoes. Drain and rinse the beans. Dice the summer sausage fine. Brown the ground beef then cook the summer sausage in with it. Put all the ingredients in a crock pot and cook on High for 2.5 hours.

To start with, I had put only a teaspoon of chili powder and had to increase it. Next time, more summer sausage. The balance of flavors was fine on sweet and spicy but a bit weak on savory.
